A woman claims she feels healthier than ever thanks to diet of raw beef, lamb and eggs

Butcher and chef, Nikolett Kiss, 25, of Vecsés, Swabian city, Hungary, made the switch to a primal diet last year, and has consisted primarily of raw meat ever since.

Nikolett spends around €70 (£60) a week on the freshest raw meat to suit her unique tastes.

She said: “The reason I choose to eat raw meat is really because I feel fantastic when I do.

“After meals, I am less bloated and have since seen a huge increase in my body both mentally and physically.

“It’s a lot easier to digest and I also really enjoy the taste.”

Nikolett regularly eats raw beef, lamb and eggs in her daily diet.

She said: “ I have quite a diverse range of meats which I enjoy eating , as well as things like liver, heart, bone marrow and brain.

“I like to have lots of different options to eat as I never want to restrict myself to just one or two options.”

Her favourite raw meat to enjoy is a brisket, aged for two to four weeks.

Nikolett added: “Dry, aged beef brisket is just incredible to eat, the flavours are so bold.

“I enjoy fatty steak meat in general, and always make sure it is organic, grass-fed meat, as this ensures the flavours are better and the animal was living a better life.

“The fat honestly melts in your mouth like butter.”

Despite traditional information suggesting it could be harmful, Nikolett is not worried about the potential risk of food poisoning from ingesting uncooked meat.

She explained: “It is not something that has ever worried me since starting this diet.

“The stomach acid we produce as humans is incredibly strong, and rivals the acids produced by most predators in the wild.

“I have never once gotten sick from eating raw meat and do not believe I will as long as I eat well sourced, fresh cuisine.”

Although she is passionate about eating raw meat, she insists describing the flavour to non-meat eaters is a difficult process.

She said: “I get asked it all the time and it’s so hard to answer because even different cuts of the same animal have vastly different tastes, depending on the animal’s diet, gender, age, and how are they treated.

“Raw beef has kind of a sweet or milky taste if the cow was grass fed, but cows raised on grains can turn the flavour of the meat almost metallic.

“I describe the taste of my grass fed, locally sourced beef as all the flavours of the freshest forest, because you should be able to taste all of the natural herbs and the green plants in the animals diet.”

“The best part is the fat, which seriously tastes like buttery cream.”

Nikolett also prefers to eat her meat unseasoned, in order to retain as much of the natural flavours as possible.

She added: “In the beginning, I tried everything to make my meat taste similar to how it would taste after being cooked., with herbs and various sauces.

“Nowadays I rarely use only salt and pepper, as the meats adopt their own unique flavours based on their treatment.

“There is a reason the best steaks are made from dry aged beef, and that is because the natural flavours are far bolder and make for a more enjoyable meal.”

She sources all of her meat from small businesses in and around her hometown.

She said: “As a butcher, I have the benefit of knowing all the best suppliers.

“We always try to get the best meat for our customers at our family shop, with all of our products coming from slaughterhouses in the countryside.

“We don’t handle industrial processed meat in any fashion, and it is not something that I wish to have included in my own diet.”

Nikolett researched the carnivore diet after suffering with PCOS syndrome, with affects the ovaries and causes irregular periods and hormone issues.

She said: “I have insulin resistance and digestion issues as well as my PCOS, so I went to the doctor in order to find a diet which better suited my conditions.

“The diet which was recommended by my doctor consisted of 160g of carbohydrates a day and had little to no effect on symptoms.

“Before long I was feeling even worse, but since I made the switch to raw meat I have never felt better.”

Her daily routine usually consists of just two meals a day, with breakfast normally skipped.

Nikolett explained: “On most days I will rarely be hungry at breakfast but try to drink water and a hot beverage without sweetener or sugar.

“My main meal is lunch, where I usually eat fatty beef with eggs, with something similar for dinner in the evening, often substituting the beef for raw bacon, pork, ham, or liver.

“However no two days are the same and I always just try to listen to my body, occasionally skipping dinner which often means 20 hours without eating.”

Nikolett occasionally eats some small fruits and vegetables if she is craving something sweeter or flavourful.

She said: “I eat things like raw garlic and onion if I want a bold flavour, and blueberries, raspberries and strawberries for sweet.

“I normally only resort to this when I am on my period as my body craves it, but all other times I am back to primal eating.

Despite the diet only beginning last year, Nikolett has been prone to the taste of raw meat in the past.

She explained, “ My family are also butchers, so throughout my childhood I was always surrounded by raw meat.

“I used to eat a lot of raw sausage meat growing up, which is still something I really enjoy today.

“I have also eaten a lot of carpaccio and steak tartare throughout my life, so there has always been this side of me even before I made the switch full time.”

Nikolett’s International truck driver husband, Roland Kiss, 27, is really supportive of her unique diet.

She said, “My husband supports everything I do, and he is totally fine with my diet despite him not eating raw himself.

“It does however mean he gets lot of steak which I cook rare for him, and what man wouldn’t love steak every day?

“I have some friends which are horrified, and I have had a lot of negative feedback online, but my close friends and my family are always on my side and have come to accept I am a bit of a weirdo.”
